Veal, Lamb, Horse & Poultry

Veal: Slaughter, Imports and Exports

  • Canada's federally inspected calf slaughter was steady in 2010 at 241,755 head.
  • Veal imports were 2,915 tonnes, an increase of 14% from the previous year.

Lamb: Slaughter, Imports and Exports

  • Canada's federally inspected sheep and lamb slaughter was at 166,899 head in 2010, an increase of 3% from the 162,743 head slaughtered in 2009.
  • Imports of mutton and lamb decreased by 15% to 15,371 tonnes.

Horse: Slaughter and Exports

  • Horse slaughter numbered 82,195 in federally inspected establishments in 2012.  This is a 8% decrease from the previous year down from 89,399.
  • 17, 665 tonnes of horse meat were exported in 2012. Switzerland, France and Japan continue to be the largest export markets for horse meat products.

Poultry: Slaughter, Imports and Exports

  • In 2012, the numbers of poultry slaughtered in registered stations were:
    • chicken, 622.6 million;
    • mature chicken, 32.2 million;
    • turkey, 20.7 million; and,
    • ducks and geese, 5.5 million.
  • Imports of poultry in 2012 were:
    • chicken, 161.4 million kg (including 55.4 million kg actual product net weight of meat preparations, stuffed products and food preparations);
    • mature chicken, 76.2 million kg (including 7.9 million kg actual product net weight of meat preparations and food preparations);
    • turkey, 9.8 million kg (including 5.4 million kg actual product net weight of meat preparations, stuffed products and food preparations); and,
    • ducks and geese, 1.7 million kg (including 113 thousand kg actual product net weight of meat preparations).

  • Exports of poultry in 2012 were:
    • chicken, 133.4 million kg (including 49.8 million kg actual product net weight of meat preparations, stuffed products and food preparations);
    • mature chicken, 18.3 million kg (including 2.3 thousand kg actual product net weight of meat preparations);
    • turkey, 9.8 million kg (including 5.4 million kg actual product net weight of meat preparations, stuffed products and food preparations); and,
    • ducks and geese, 1.7 million kg (including 77.2 thousand kg actual product net weight of meat preparations).
